Genmaicha (Japanese green tea with roasted brown rice)

This genmaicha is made with first-flush (ichibancha) pan-fired green tea from the Tsuyuhikari cultivar. The clean, refreshing character of pan-fired green tea is blended with organic roasted brown rice in a 1:1 ratio, creating a light-bodied genmaicha with a pleasant balance of roasted and refreshing flavors.

Because of the roasted brown rice, we recommend using a slightly larger amount of tea leaves and brewing with freshly boiled water. It is also exceptionally well suited for cold brewing—use about 7 g of tea per 500 ml of cold water for a surprisingly clean and refreshing cup.

What is Pan-Fired Green Tea?

Most Japanese green tea is made as sencha, in which the freshly harvested leaves are steamed to halt oxidation before further processing.

Pan-fired green tea, by contrast, begins with roasting the fresh leaves in a large iron pan, much like a wok. This is the traditional method used for the vast majority of Chinese green teas.

Compared with steamed green tea, pan-fired green tea has a cleaner, lighter profile and develops a distinctive roasted aroma known in Japan as kamaka ("pan aroma"). It is also exceptionally rare, accounting for less than 1% of all green tea produced in Japan.

この玄米茶には「つゆひかり」という品種の釜炒り緑茶(一番 茶)を使用しています。釜炒り茶 ならではのすっきりとした風味に、有機玄米を1:1でブレンド。 香ばしさと爽やかさのバランスが 心地よい、軽やかな味わいの玄米茶です。玄米が入る分、少し多めの茶葉に熱湯で淹れるのがおすすめ。水出し(冷水500mlに茶葉7gほど)でも驚くほどさっぱりと美味しく楽しめます!

『釜炒り茶とは?』

一般的に日本で作られる緑茶は、煎茶と呼ばれ、茶を摘んだあと「蒸して」製茶を始める工程で作られています。一方で釜炒り茶は茶を摘んだあと大きなフライパンのような釜で「炒めて」製茶を始める緑茶の作り方をします。ちなみにほとんどの中国緑茶もこの釜炒り茶の製法で作られています。蒸して作る煎茶に比べてさっぱりすっきり、釜香と呼ばれる特有の香りも生まれます。日本では生産量は緑茶の中で1%未満と希少なお茶です。
